How Pressure Cookers Work

A pressure cooker seals the pot and builds internal pressure by heating liquid to produce steam. The increased pressure raises the boiling point of water from 212F to approximately 250F. Food cooks at this higher temperature, which dramatically reduces cooking time. Tough collagen in meat breaks down into gelatin in about one-third the time of conventional cooking.

Modern electric pressure cookers (like Instant Pot) combine pressure cooking with saut, steam, rice cooking, yogurt making, and slow cooking functions in a single appliance.

How Slow Cookers Work

A slow cooker heats food slowly at low temperatures (170-280F) over an extended period typically 4-10 hours. The gentle, moist heat gradually breaks down connective tissue in meat without the pressure-induced speed of a pressure cooker.

Slow cooking is valued for its hands-off convenience ingredients go in, the timer is set, and the meal is ready hours later. It is ideal for soups, stews, pulled pork, and dishes where flavors meld over time.

Cooking Time Comparison

Pressure cooker: Dried beans: 25-35 minutes. Tough meat (pulled pork): 60-90 minutes. Rice: 12 minutes. Whole chicken: 30 minutes.

Slow cooker: Dried beans: 8-10 hours (must be soaked first). Tough meat: 6-8 hours on low, 3-4 hours on high. Rice: not suitable. Whole chicken: 3-4 hours on high.

Pressure cookers are 3-10x faster for most recipes.

Energy Efficiency

Pressure cookers use less energy because they cook faster and retain heat more efficiently in a sealed vessel. A 6-quart pressure cooker uses approximately 0.5-1 kWh for a full cooking cycle. A slow cooker uses approximately 1.5-2.5 kWh for the same cooking duration.

For daily cooking, a pressure cooker saves approximately $5-10 per month in electricity costs compared to a slow cooker.

Food Texture Differences

Pressure cookers produce tender meat quickly but can overcook vegetables if not timed carefully. The high-pressure environment does not develop the same depth of flavor as slow cooking because Maillard reactions (browning) require temperatures above 300F, which pressure cookers cannot reach.

Slow cookers excel at developing rich, complex flavors through prolonged low-heat cooking. The extended time allows spices and herbs to fully infuse the dish. Vegetables cooked in a slow cooker maintain better texture and color.

Versatility

Modern electric pressure cookers offer 10+ functions: pressure cook, saut, steam, rice, yogurt, cake, sous vide, sterilize, warm, and slow cook. A single appliance replaces multiple kitchen tools.

Slow cookers are single-purpose they cook slowly. Some models include a saut function, but the capability is limited compared to a pressure cooker's dedicated high-heat saut mode.

Slow cookers: $20-$60 for basic models, $60-$150 for programmable models.
